Stuffed Mushroom Caps

These stuffed mushrooms are the perfect appetizer for a party.  They are easy and delicious!

You will need:

1 small tub of goat cheese (about 4 oz)

1 container of whole mushrooms or mushroom caps

2 slices of bread (I use the bread recipe on this blog – Drew’s Bread)

parsley flakes

garlic powder

salt

pepper

olive oil

Directions:

Pre-heat oven to 425 degrees.  Line cookie sheet with tin foil and spray with olive oil or Pam type spray.

Clean mushrooms and remove stems if needed.  Place mushrooms on tin foil.  Add two slices of bread to the blender and blend so they are ground.  Next, add 1/2 tablespoon parsley flakes, 1/2 teaspoon salt, 1/2 teaspoon pepper, and 1 teaspoon garlic powder to the blender.  Blend again.  Finally, add the tub of goat cheese and blend.  Take small spoonfuls of the blended mixture and place them into the mushroom caps.  Drizzle the stuffed mushrooms with olive oil.  Bake at 425 degrees for 15 minutes or until mushrooms are soft.
